I had French Toast on the menu for breakfast yesterday. When I got up, I found there were only five eggs left. My recipe called for six eggs.
Now, my husband loves French Toast. (In fact, there is a story circulating around that he ate a whole loaf of bread when the youth group made it into French Toast.) I knew changing the menu would crush him, so I made a half batch.
There was enough for everyone’s breakfast and I still had two pieces left over.
Many times we think we can’t do something, when really we just have to scale back a bit. It is called making do with what you have. My grandparents had to do that a lot during the great depression.
The next time you don’t have it all, cut the recipe in half!
