Fresh is Always Better

One of my heroes, FlyLady.net, has a saying, “Don’t drink your fruit.”

A local doctor agreed with her noting the high amount of fructose in most forms of juice. I took that advice to heart and I buy only fresh fruit, not keeping fruit juice on hand. My healthy habit posed a problem when I wanted to make one of my favorite summer salads that called for 3 tablespoons of frozen orange juice concentrate. I substituted the juice of one orange and the dressing was great!

Spinach-Apple-Bacon Toss

8 ounces spinach, torn into bite-size pieces

4 slices bacon, crisply fried and crumbled

1 red apple, sliced

1/3 cup mayonnaise or salad dressing

3 T. frozen orange juice concentrate, thawed or the juice of one orange

1. Tear spinach into bite-size pieces.

2. Slice or chop apple.

3. Chop bacon slices.

4. Mix together mayonnaise and juice.

5. Pour over salad and toss.

If you were observant, you may have noted I used more than four slices of bacon. It was an accident. I cook the bacon a package at a time in the microwave and freeze what I do not use. I ended up using it all by mistake.
