Frozen vegetables to the rescue!
Vegetables are frozen right after harvest and that means they keep their nutrients. If you thaw a small portion of them in the refrigerator overnight, they are good on salads. The consistency is the same as “al dente” pasta.
Be sure to thaw a small portion because whatever you do not use will need to be cooked right away.
